‘Red and white’ is Japanese celebration color. Present red and white sweets is for sharing happiness.

In the heart of celebration sweets, bean paste is always.

Off cause red bean and white bean!

Bean paste ball

1. Soak red or white (lima) bean 300g in cold water over night in fridge.

2. Drain it. Put the bean in vacuum pot (I use Thermos Shuttle Chef) with 600cc water.

3. Place the pot over hight flame. Once it boils up, add 200cc cold water.

Re-boils up for 2-3 min.Drain and wash beans.

4. Put the bean back into the pot with 600cc water. Repeat 3 once more.

5. Put the bean back into the pot with 600cc water. Boil up again.

Place the inner pot into outer shell. Leave half day.

6. Boil up again and put in inner shell.

Do this 3 day 3 night until the beans become very soft.

The second day add 300g sugar and a pinch of salt.

For lima bean, when the bean’s outer cover coming out, take it out.

7. Drain bean well. Put in food processor and grind it.

Make a small balls. It can be froze.

Put inside of jelly or cup cake. Or eat with ice cream.

Green tea flavor is recommended.

The soup from the red bean (the water at step 7, not 2 & 3) has nice flavor too.

Mix the red bean soup, some cooked red bean and whipping cream.

Place into silicon candy mold (I bought at one coin shop). Place bars. Freeze it.

As living in tropical country for long time, I love jelly-like-sweet more.

When I lived in Japan, I often ate the jelly-like-sweets in Summer.  Those come from not gelatin, from seaweed or roots powder, contain lot of water, make body cool down, bring relief with sweetness.

I find difficulty to get the same ingredient here. So I started experiments, found some way.

Tapioca pudding

Ingredients for 2 cups; Liquid 200cc, tapioca powder 10g, sweetness about 60g, additional

For example : Milk + maple syrup or honey / Soy milk + sugar + matcha(green tea powder) / Coconuts milk + palm sugar

Put all of the ingredients in a pot. Mix well.

Taste a bit. It must be a bit too sweet. Because when it cool down, we feel less sweetness.

Heat over middle heat. Keep stiring from the bottom. Don’t stop. It will not take long time.

When it starts become gravy, remove from heat. Keep stiring until it becomes smooth and thick like potage soup. No need to become solid.

Pour into cup. Wrap it and keep in fridge.

When it cool down, it is not solid, not liquid. Something in between.

In the photo, these are soy milk+green tea and milk + ginger honey, which my friend taught me. It is mixture with honey and sliced ginger, which can be made into good drink with lime squeeze and hot water.

Tropical weather comes back. Cool morning wind has gone. Pink flowers start blooming.

This morning I changed my wake-up drink to cold green tea. It’s a cool breeze though my throat.

Put green tea leaves in paper bag. (‘Daiso’ is selling paper bags for tea) Put it and cold water in glass jar.

Keep it over night in fridge. That’s all.

Next morning cold green tea is waiting you wake up.

I make cold tea from not only Japanese green tea.  Ron-jin tea (龍井茶Chinese green tea), Gao-shan tea (高山茶Taiwan green tea), Eastern beauty(東方美人 Taiwan tea), Earl Gray tea, Blackcurrant tea, Blueberry tea are my favorite too.

Every morning I get out from bed, do a little breathing practice and make a cup of green tea. I offer the first flash to Saraswati and Ganesha. Then I drink the rest of tea.

  

My morning tea is Japanese green tea, brought from Japan. This is my favorate shop. The shop is in old traditional town house in Kyoto.

In quiet kitchen I  make boiling water and prepare tea leaf in the pot. Pour hot water into the cups for making cups hot. Then remove the hot water from the cups to the pot. One breath, pour the tea into the cups till last drop. Slightly open the pot cover. So I can make tea 3 times.

Having tea in calm mind, I check today’s plan and write yesterday’s activity in my note. Then I get start today’s life.
