Evert time I go back Kyoto, I sit in an old tea house next of Imamiya-shrine,

have fresh baked sweets, Aburi-mochi.

Tiny rice cakes are threaded onto bamboo skewers, dusted with soyabean flour, baked over charcoal fire, served with sweet white miso sauce. All are done by auntie’s hands.

Take a sip of tea, recall the first visit here, girls laughing voice. I was a junior high school student.

 

This tea shop is far old, established over a thousand years ago. The current tea house was built about 300 years ago. No change. Still alive.

 

Aunties bake them every every day, piece by piece, serve in fresh baked.

 

I taste it, the taste of this moment in long long period of time with gratitude.

 

 

古い茶屋で焼きたてのお餅を

 

京都に帰ると、いつも今宮神社隣の古い茶屋に座って、あぶり餅。

 

竹串に小さなお餅をつけ、きな粉をまぶして炭火であぶり、甘い白味噌のたれをからめてお皿へ。全部おばさんたちの手作りだ。

 

お茶を一口。初めて来た日を思い出す。友達の笑い声。まだ中学生だった。

でも、この茶屋はずっと古くて創業は千年以上前、現在の茶屋は300年位前に建てられたもの。変わらず、そして、今でも息づいている。

 

おばさんたちは日々、一つづつこしらえ、焼きたてを持って来てくれる。

 

ひとつ、いただく。長い長い時間の中の今の瞬間を味わう。

 

I am with my friend in a dried food wholesale shop, asking lots of questions.

Pick up a pack from a soup ingredients shelf and ask again. ‘How do you think?’

‘Yes. It’s good idea, because you teach yoga, speak a lot!’

The pack contains dried fruits and nuts,

saying

‘Moisten lungs tea with Heaven flower’s fruits’.

 

Wow! That attract me,

me a Chinese Traditional Medicine beginner.

 

Having cooked according her instruction,

I got Amrita – nectar from heaven.

 

 

Rinse white nuts – Sweet almonds in hot water. Rinse other ingredients – Snow pears, Tangerines, Honey dates, Figs in water. Cut figs into half.

Heat 1 liter water in a pot. I use thermal cooker. When water is warmed, add all the ingredients. Boil it in high fire then lower heat to simmer for another 45 mins.

Pour over strainer. Separate liquid and others. Keep fig and dates.

Drink with hot water, or soda and ice cubes.

Or mix with Agar. Make jelly with figs and dates.

 

Sweetness from heaven soak our throat, lungs and our words.

薬膳ビギナー

 

乾物卸問屋さんで友人に質問の嵐。薬膳スープの棚からひと袋取り出して「どう思う?」

「そうね。それがいいわ。ヨガを教えてるから、いっぱい喋るしね。」

 

袋にはドライフルーツとナッツ。ラベルには「天花果 潤肺茶」

薬膳ビギナーの私にはいいかも!

 

友人に教わった通りに作ると、アムリタ・天の甘露の出来上がり。

 

白いナッツ・スィートアーモンドは熱湯に通す。他の材料・雪梨、蜜柑、棗と無花果をさっと洗う。無花果は半分に切る。

鍋に1リットルの水を入れ火にかける。私は真空保温鍋を使用。水が温かくなったら全ての材料を入れ、一度強火で沸騰させてから、45分弱火で煮る。

漉して液体とその他に分ける。無花果と棗を取り出しておく。

 

熱いお湯と一緒に飲み物として。ソーダと氷で冷たくして。

寒天を溶かし、果物と一緒にスィーツとして。

 

天の甘露を喉に、肺に、そして言葉に。

 

End of year I used to go grandma’s house to make Mochi for New Year.

Aunties, uncles, nieces and nephews together steamed rice. Pounded, balled it up.

Grandma gave us fresh mochi-ball with red bean paste. It was soft and sweet.

 

Can I make that with my favorite bean curd?

Bean curd mochi

Place 150g bean curd, 3 Tbs Tapioca flour and some sweet such as sugar, maple syrup in small pan. Mix completely like smooth paste with hand blender.

Heat tha pan over medium flame. Keep stirring by spatula until it become sticky.

Off the flame. Keep stirring for a while. Pour into glass cups. Leave them till cool down. Keep in fridge.

Serve with some sweetness such as red bean paste, soya bean powder with sugar or ice cream.

Enjoy healthy sweetness!

 

豆腐わらび餅

 

年末になると、お正月のお餅つきにお祖母さんの家に行ったものだった。

親戚が集まって、もち米を蒸して、杵でついて、わいわい丸めた。

お祖母さんができたてのお餅とあんこをくれたっけ。甘くて、まだ柔らかい。

豆腐大好き。これで作れないかな?

 

作り方

豆腐150グラム、タピオカ粉大さじ3と砂糖やメープリシロップなどの甘味適量を、小さな鍋に入れる。ハンドブレンダーで、なめらかなペースト状になるまで混ぜる。

中火にかける。ヘラで混ぜ続ける。粘りが出たら火を止めて、もうしばらく混ぜる。

ガラスのコップに入れ、粗熱が取れたら冷蔵庫で冷やす。

あんこやきな粉、アイスクリームと一緒にいかが?

甘くてヘルシー!

When I go yoga practice tour, feel tired eating out everyday,

need my comfort food in the room.

My luggage is occupied by commissariat, Japanese traditional dried food.

Soup stocks, dried veggies, seaweeds, buckwheat noodle,

Germinated & roasted brown rice.

Rinse it. Drain water well.

Pour rice and some salt into pan. (NOT non-stick pan)

Heat over middle flame.

Keep staring about 8-10 mins

until it become brown and popping gets lesser.

Already edible as snack or salads topping.

Keep rice and water in fridge for several hours. It’s already soft.

Pour in small pot with or without fresh veggie.

Cook until veggies are ready.

 

Germinated rice is cooked much quicker and sweeter. More life energy.

Good sleep and food are very important for keep going, right?

 

兵站

 

ヨガ修行に長く出かける時、毎日外食は疲れちゃう。お部屋で慣れたご飯が楽チン。

荷物に兵站、乾物を詰め込む。出汁パック、干物、海藻や蕎麦

それと、炒り発芽玄米

 

炒り発芽玄米

玄米を発芽させる。さっと流して、水をよく切る。テフロンでないフライパンに、玄米と塩を入れて中火で炒る。10分程かき混ぜ続け、茶色に色づきパチパチ音が減ったら火を止める。

このまま、スナックやサラダのトッピングとしてもオッケー。

 

炒り発芽玄米 粥

玄米を水に浸し、数時間冷蔵庫に入れておく。すでに柔らかい。小さな鍋に入れる。野菜もあれば投入。野菜が煮えたら出来上がり。

 

玄米を発芽させると、柔らかくて甘い。生きるエネルギーがいっぱい。

前へ進むなら、よく眠ってちゃんと食べることって大事!

 

Having been living in hot climate, my table was changed.

Love ceramic dishes with its warmness in Japan.

Love glass dishes with its coolness in tropical country.

Glass dishes are my regulars.

They have nice shape, have lids. Rarely need plastic wrap.

They are transparent. Can be found easily in fridge.

Fruits, sweets, salad.  Cool soup. All I love are in them.

Breakfast yogurt with chia seeds, which is prepared in previous night,

goes to table straight away.

 

Transparency. Straightforward. Love them!

 

ガラスの器

熱帯に住んで、テーブルの風景が変わった。

日本にいた時は、温かみのある陶器が好きだった。南国では涼しげなガラスの器が好き。

 

ガラスの器がレギュラーメンバー。良い形で蓋つき。ラップはほとんど使わない。

果物、お菓子、サラダに冷たいスープ。私の好きなものばかり。

夜に用意しておいたチアシード入りのヨーグルトは、そのまま朝ごはんのテーブルへ。

 

透明で前向き。良いっしょ?

 

‘No need to compare with others. See your own.’ I shouted.

‘I just wanted to see others to know whether I did same.’ She murmured.

‘We no need to be same. Do our best.’

Wow! Colorful carrots! Red, Orange, Yellow and Purple.

I saw in the market, couldn’t resist to buy all colors.

Let’s cook in same way. See the difference.

I cooked them into glace carrot, soup, salad, pickles. Together and individual.

Red is softer, good in thick size. Orange is stronger carrot taste.

Yellow is lighter and obedience. Purple is harder but sweeter in thin slice.

They are similar but different. Not good or bad. Just different.

They all are lovely sweet.

Purple is better to be cooked individually, otherwise all becomes in purple.

Life is experiment. Try and see what’s happening.

Try again and see again. Analyze the result. Change the method. Try again.

Keep going on.

I read an article ‘Baked yogurt’. Sounds interesting.

After experiments, it turned out solid curd, taste like low fat cheese.

Sometimes a bit soft, sometimes solid.

Sometimes a bit sour, sometimes not at all.

Keep going on! Enjoy the process.

Baked Yogurt

Set coffee filter on its strainer. Pour yogurt into it. Keep it in fridge over night.

Yogurt gets thicker. The liquid comes out.

The liquid is whey protein, which has highly nutrition.

Drink it. Fresh taste. Or use as face lotion.

Squeeze the filter. Pour thick yogurt into shallow tray.

Heat oven 170 celsius. Bake 30 min.

Don’t shake, otherwise it will not become solid.

Remove from oven. Leave it until cool down. it becomes solid.

Oh! Nearly every time.

Love beans. But my digestion system doesn’t allow to have a lot.

Love fresh food. Wanna cook beans in small amount.

Food jar jumps into my view. Ok. I find a way.

Soak beans over night.

Pour boiling water in a food jar. Tight the lid. Warm up the jar.

Put beans, salt and water in a small pot.

Let it boil up. Add spice, herbs if you like.

Drain the jar. Pour the ingredients. Tight the lid again and wait.

Fresh cooked beans are awaiting as a small treats. Relax. Have coffee?

Snap snap snap

Break off cauliflower into small clusters.

Just washed. No cooked. But mixed with seasonings.

No worry about calories. Be good as its Vitamin C and immune strength.

Easy peasy. Freshy healthy. Enjoy!

‘Really?’

It looks black, but is a purple carrot.

Peel the skin. Purple inside appears.

Purple color comes from Anthocyanin,

which is antioxidant.

Just slice and add in salad.

Crunchy sweetness entertains cheerfully.

Cook into cream or soup.

Smooth sweetness comforts gently.
